Judging the staff by how fast they leap up and down the stairs, the joint at Katikies is jumping. Nicos Pagonis cares very much about his vertiginous jewel in Oia, the prettiest village on Santorini. The island is extraordinary: an eruption in 1550bc submerged its center, leaving the crater into which Katikies whitewashed rooms and suites are tunneled. All on different levels, connected by stairs and bridges, each has a blue-floored terrace or balcony overlooking the deep blue sea 300 feet below, where yachts sail by, Unpretentious, it's "minimalist goes Mediterranean", with illusion-line pool, sleek little bar, restaurant with scrubbed tables and at night, perched on an impossible rocky outcrop, a dining room with four tables in a white calico tent.
